For the Vanilla Pound Cake:

    • 1 ½ cups (3 sticks) unsalted butter, softened

    • 3 cups granulated sugar

    • 5 large eggs, room temperature

    • 3 cups all-purpose flour

    • ½ tsp baking powder

    • ½ tsp salt

    • 1 cup whole milk

    • 2 tsp pure vanilla extract

For the Blue Velvet Swirl:

    • 1 ½ cups of the vanilla batter (set aside)

    • 1 tbsp cocoa powder

    • 1 tbsp buttermilk

    • 1 tsp white vinegar

    • Blue gel food coloring (as needed)

Optional Glaze:

    • 1 cup powdered sugar

    • 23 tbsp milk

    • ½ tsp vanilla extract


Instructions

1. Prep & Preheat

  • Preheat oven to 325°F (165°C).
  • Grease and flour a 10-inch Bundt pan or two loaf pans.

2. Make the Vanilla Batter

  • Cream butter and sugar until light and fluffy (5 mins).
  • Add eggs one at a time, mixing well after each.
  • Whisk dry ingredients (flour, baking powder, salt) in a separate bowl.
  • Alternate adding dry ingredients and milk, starting and ending with flour.
  • Stir in vanilla.

3. Create the Blue Velvet Swirl

  • Remove 1 ½ cups of vanilla batter into a separate bowl.
  • Mix in cocoa, buttermilk, vinegar, and blue food coloring until vibrant.

4. Layer & Swirl

  • Spoon alternate dollops of vanilla and blue batter into the pan.
  • Use a knife to swirl gently—don’t overmix!

5. Bake to Perfection

  • Bake 60-75 mins (until a toothpick has moist crumbs).
  • Cool 15 mins in the pan, then transfer to a wire rack.

6. Optional Glaze

  • Whisk powdered sugar, milk, and vanilla until smooth.
  • Drizzle over cooled cake for extra sweetness.
