    • ¾ cup brown sugar

    • ¼ cup granulated sugar

    • ¾ cup olive oil (or vegetable oil)

    • 3 large eggs

    • 1 tsp vanilla extract

    • 1½ tsp baking powder

    • ½ tsp baking soda

    • 1 tsp cinnamon

    • ½ tsp nutmeg

    • ¼ tsp salt

    • Optional: ½ cup crushed pineapple (drained), ¼ cup chopped walnuts or pecans

    • For the Cream Cheese Filling

        • 8 oz cream cheese (softened)

        • ½ cup powdered sugar

        • 1 tsp vanilla extract

        • ¼ cup heavy cream (whipped until soft peaks form)

For the Frosting / Outer Layer

        • 1 cup cream cheese (softened)

        • ½ cup unsalted butter

        • 1 tsp orange zest (for a citrus twist)

        • 1 tsp vanilla

        • 2½ cups powdered sugar

        • Optional: orange food coloring for a vibrant dome look

Instructions

Step 1: Prep and Preheat

    • Preheat your oven to 350°F (175°C).

    • Grease a 6–8-inch dome mold (or metal mixing bowl) and line the bottom with parchment paper.

Step 2: Mix the Cake Batter

    • In a large bowl, whisk together oil, sugars, eggs, and vanilla.

    • In a second bowl, combine dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

    • Gradually mix the dry ingredients into the wet until fully combined.

    • Fold in grated carrots, and if desired, pineapple and nuts.

Step 3: Bake the Dome Cake

    • Pour the batter into the prepared dome mold.

    • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

    • Allow the cake to cool in the mold for 20 minutes, then invert and let cool fully on a wire rack.

Step 4: Make the Filling

    • Beat the softened cream cheese with powdered sugar and vanilla until smooth.

    • Gently fold in whipped cream until light and fluffy.

    • Chill the filling while the cake cools.

Step 5: Assemble the Cake

    • Slice the cooled dome cake horizontally into 2 or 3 layers.

    • Add cream cheese filling between each layer, then carefully reassemble into dome form.

    • Crumb-coat the entire cake and chill for 30 minutes.

Step 6: Frost and Decorate

    • Whip together all frosting ingredients until creamy.

    • Use an offset spatula to coat the dome cake smoothly.

    • Decorate with chopped nuts, orange zest, or edible flowers for an elegant finish.

Serving Tips for Parties & Events

Presentation and portioning are just as important as flavor when serving your Carrot Dome Cake. Whether you’re slicing it for family or showcasing it at a special event, a few thoughtful steps go a long way.

Serving Suggestions:

  • Slice with a serrated knife: This prevents crumbling and helps maintain the dome’s shape.
  • Serve slightly chilled: Let the cake sit at room temperature for 15–20 minutes before slicing for the perfect texture—not too firm, not too soft.
  • Add garnishes to the plate: A drizzle of citrus glaze, a few crushed pistachios, or even a mint sprig enhances presentation.
  • Pair it with beverages: Coffee, spiced chai, or a sparkling citrus mocktail make excellent pairings.
